Pigato 2021 - Le Rocche del Gatto
The Pigato by Rocche del Gatto is a white wine obtained from careful vinification with skin maceration of Pigato grapes from vineyards that rest on clayey and rich in iron soils. It is vinified as if it were a red berry wine fermenting for three weeks in contact with the skins in order to make it acquire the maximum organoleptic characteristics of the grape. After fermentation, a long stay on the noble scum follows.Pigato has a golden yellow color due to maceration. The nose is intense and fresh, with fruity and floral notes. The sip is dry, soft and full-bodied, with excellent flavor, persistent finish with a pleasant bitter aftertaste.

Service
We recommend tasting it at a 10/12 ° temperature in tulip goblets. Daily wine but keeps the time well.

The Le Rocche del Gatto company is located in Liguria in the hinterland of Albenga, nestled in the Bastia hills that surround the Albenga plain. The owner of the company is Fausto De Andreis with a past at Olivetti in Ivrea, who in 1982 gave up everything to devote himself to what he loves most in life. Thus begins the adventure of Le Rocche del Gatto, a name chosen in honor of his wife Caterina, always surrounded by a flood of cats. In seven hectares, Fausto cultivates cultivates Ligurian vines such as Pigato, Vermentino, Rossese and Ormeasco. One of its most famous wines is certainly Spigau, a white wine which is macerated on the skins for a few days in order to have a more complex aromaticity. Today the Le Rocche del Gatto company produces about 75 thousand bottles a year. The wines of Le Rocche del Gatto are austere and complex, far from the classic Ligurian wines and closer to the stylistic canons of wine areas such as the Moselle. Over the years they acquire hints of hydrocarbons and toasted always maintaining a lively acidity. Never banal wines that have become cult among enthusiasts.
