Nicolas Vauthier was among the first to promote natural wines in France. He was the creator of Aux Crieurs de Vin, a bar in the center of Troyes, which has run for more than 10 years. At some point in his life, wine has become such a lure that he decided to leave the bar's management and dedicate himself to production. He founded Vini Viti Vinci, located in Avallon, north of Burgundy, near Chablis. Nicolas follows with great care all the flower production, coming from vineyards that are farmed on the land of Chitry, Irancy Épineuil, and manages manually, and the winemaking that comes with the Minor intervention possible. Red wines a Gamay base, Pinot Noir and Caesar are vinified with whole grapes while the whites Chardonnay and Sauvignon ferment in wood barrels. Its first harvest was in 2009 and its wines have become in a short time have become the capisaldi of the appellation.
