The Metodo Classico Ma Non Troppo is the latest arrive to Tenuta Belvedere. It is a wine that comes from pure Pinot Noir grapes. The grapes come from a 35 year old vineyard with a yield of 70 quintals. Manual harvest at the end of August and a soft pressing in the cellar. Only 30%, i.e. the must, will be fermented spontaneously with only indigenous yeasts in steel tanks. Draft in May and stop on the lees for about 27 months. No addition after disgorging. Pas Dosè type.

The Metodo Interrotto Brut Nature is a sparkling mineral and highly drinkable wine obtained using white grapes. Spontaneous fermentation for the formation of the base wine and refermentation in the bottle where it remains to refine on the lees for two years. It is not opened or dosed and without the addition of sulfur dioxide before being put on the market. It has a slightly turbid straw yellow color with lively bubbles.
