PÉT-NAT WINES

It is a traditional and artisanal method that the farmers used for the production of their wine. In the past the harvests were made in October, and with the arrival of the first winter cold the alcoholic fermentation stopped, leaving residual sugar. With the arrival of the first warm spring, fermentation resumed and the sugars were transformed into alcohol and carbon dioxide that remained inside the bottle, creating the sparkling wine, and since the yeasts were not broken they also remained inside, thus creating the "sur lie". The same procedure is used by modern winemakers who sometimes, instead of residual sugars, add sweet must. This technique is also called ancestral method referring to the French ancestral mèthode. The wines produced in this way are more veiled, with a fine bubble, and a taste of greater complexity, but certainly what amazes, is that the bottle disappears in a flash.

Charles Dufour's Extra Brut Champagne "Bulles de Comptoir 13 - Cuisine du Dimanche" is a Champagne from the Côte de Bars region, made from a blend of Pinot Noir, Chardonnay, and Pinot Blanc. Most of the blend (65%) is from the 2022 vintage, with the remaining 20% being Reserve grapes from 1982-2021. Fermentation occurs spontaneously with indigenous yeasts. Aged in Burgundian barrels and large oak barrels. No fining or filtration is performed before bottling.

Gaz de Schistes by Domaine Durrman is an aromatic pet nat with citrus scents and a vibrant acidity. The name derives from the schist slopes from which the grapes come. The Pinot Blanc is macerated for three weeks before being blended with Pinot Gris and Riesling, which continue fermentation together before finishing fermentation in the bottle. Lively and spirited, it amuses with every sip.

For the creation of Champagne Extra Brut "Bistrøtage" B.19, Charles bought the grapes from his mother Francoise Martinot, which is why both names are listed on the label. The B.19 cuvée is made from 100% Pinot Noir grapes from the 2017 harvest from the Chervey cru. One year of aging 50% in neutral oak barrels, and 50% in steel tanks. It is rosé Champagne with a predominantly fruity, citrus and mineral aromatic profile. The sip is fresh and dynamic, but very soft.

Atmosphères by Landron is a sparkling wine obtained from folle blanche, pinot noir and chardonnay grapes. It ferments slowly in wooden vats for 15 days. Did you know that Pinot Gris can produce excellent classic method sparkling wines? SYLVIE SPIELMANN, in her native terroir of Bergheim, Alsace, provides irrefutable proof of this with the “Ang'Ailes” cuvée, the fruit of the 2020 harvest. It is a classic method made with 50% Pinot Gris vinified off the skins and 50% macerated on the skins. Indeed, the color is ineffable: a full, dark orange, almost coral, with a vinous, dark aroma of wholemeal bread and spices. The palate is upright, authoritative, broad, and structured. The finish features a captivating hint of quince and a hint of sugar (just 4.3 grams!) to subtly round out a full, flavorful drink. A very original classic method, to be dedicated to the table (for example with a larded rabbit), uncork a little in advance and serve at 12 or 13 °C in large glasses (more than ever, avoid flutes)
