Domaine Paget, located near the confluence of the Indre and Loire rivers, just downstream from Tours, boasts a history dating back to the late 19th century. Since 2001, the estate has been led by Nicolas, representing the fifth generation of winemakers, assisted by his wife, Pascaline. The winery manages 14 hectares of certified organic vineyards (Ecocert since 2011), adopting a rigorous and sustainable agronomic approach. In the vineyard, the Pagets practice grassing between the rows and weeding between the rows, with meticulous management that includes pruning, manual defoliation, and careful adjustment of the leaf area. This method aims to prevent disease through curative practices rather than curative interventions. Organic treatments are used only when strictly necessary, respecting the principles of biodynamic and organic agriculture.The vines are the result of mass selection, and the choice of grape varieties is based on their ability to fully ripen in the terroirs of the Loire, a region of great importance for the quality of the grapes. Harvesting is done exclusively by hand, ensuring the selection and quality of the grapes. In the cellar, vinification is carried out using minimally invasive methods: alcoholic fermentation occurs spontaneously thanks to indigenous yeasts, without the use of external yeasts or enrichment of the must. The wines are stabilized thanks to the thermal inertia of the cellars dug into the chalk, which maintain a constant temperature of approximately 12-13°C, preserving the purity and freshness of the product. Nicolas defines his wines as "democratic, designed for sharing," the result of an approach that favors naturalness and balance, offering authentic and accessible wines, a sincere expression of the terroir and the passion that drives them.
