The Naturale Frizzante Sui Lieviti is a light and very lively wine produced with natural refermentation in the bottle. Deep yellow color, subtle and persistent perlage. "Funky" evokes the winery's experimental approach to the winemaking of this ancient Lazio grape variety. Manual harvesting in small crates is followed by vinification using two distinct methods: half the grapes are pressed directly, and the other half macerate on the skins for 24 hours before pressing. The wine matures for eight months in stainless steel. Bottling follows, followed by eight months of bottle aging before release. This experimental wine demonstrates how double vinification and the longevity of the vines can lend structural complexity and territorial depth to this Lazio white wine, both ancient and modern in character.

The vinification takes place with maceration on the skins for the Chardonnay, while the Durella is pressed directly. Subsequently, the Durella ages in wood while the Chardonnay remains in steel on the suspended lees all the time.
