Ribolla Gialla by Damijan podversic is an elegant and full-bodied orangewine that comes from the grapes of the same name that come from the vineyard located on Monte Calvario, just outside Gorizia. After fermentation, it ages in large barrels for 23 months and rests in the bottle for another 6 months before being put on the market. An amber-yellow colored wine with a complex nose of ripe fruit, hints of almond paste and resinous balsamic. On the palate it is powerful with excellent acidity and elegant tannic texture.

The Ribolla Gialla by Damijan podversic is an elegant and full-bodied orangewine that comes from the grapes of the same name that come from the vineyard located on Mount Calvario, on the outskirts of Gorizia. The fermentation takes place spontaneously with only indigenous yeasts in truncated cone-shaped oak vats with a maceration on the skins of 60-90 days. After fermentation, Ribolla Gialla is aged in large barrels for 23 months and rests in the bottle for another 6 months before being put on the market. The Ribolla has an amber yellow color with a complex nose of ripe fruit, hints of almond paste and resinous balsamic. On the palate it is powerful with excellent acidity and an elegant tannic texture.
Service
It is advisable to serve the Ribolla Yellow at a temperature of 15 ° in balloon goblets. Wine to drink immediately but left a few years in the cellar can give great emotions. The sediments contained in the wine bottle retain it and protect it.

Damijan Podversic began his work as a viticulturist by cultivating a small vineyard of half a hectare used by Chardonnay, which belonged to his grandfather, and above all by listening to his master's advice: Josko Gravner. Damijan begins to purchase 6 hectares of old vineyards on Mount Calvario, planted with Ribolla Yellow, Malvasia, Tocai, Merlot and Cabernet Sauvignon, and manages 2 hectares of Gradiscutta planted in Chardonnay, Malvasia and Tocai, and one hectare and a half To Piedimonte with Tocai, Chardonnay and Malvasia. Damijan is absolutely strict at all stages of production from the vineyard to the cellar; In the vineyards practice the biological techniques and decide the harvest time, walk among the vineyards by tasting the peel and the seed, in fact the substances needed to make a good wine are between these two elements. If the grapes are not ready, they will not harvest even knowing they will lose part of their production. Even in the cellar, all stages of the work are characterized by lunar phases, spontaneous fermentations, indigenous yeasts, macerations on the skins even for white wines.
