We recommend tasting it at a temperature of 8/10 ° in tulip goblets. Wine that left in the cellar a few years can give you great emotions. It is recommended to store it at a temperature below 16 ° C.
Pairing
Great in combination with vegetable appetizers, fish dishes, to try with tuna fish.
Cellar: Frank Cornelissen
The cellar of Frank Cornelissen is located in Solicchiata, on the north side of Mount Etna. Frank, of Belgian origin and exuberant and dynamic character who has always fallen in love with wine, decided years ago to leave his land to come to Sicily and produce wine. Frank's philosophy of vine cultivation is that man is not able to fully understand Nature as a whole, its delicate internal balance, and therefore, every action is intended to overwhelm it, to dominate it. His approach, however, is completely different, he is not his soil, does not use any vineyard treatment that is chemical, biological or biodynamic, grapes are harvested to perfect maturation and fermentations take place in terracotta pot of various dimensions buried in lava stone. Its vineyards are small parcels that are farmed on their feet with the sapling system, located in different districts at an altitude of between 600 and 900 m. Frank cultivates not only the typical vineyards of Etna such as Nerello Mascalese and Cappuccio but also old vines that have almost disappeared like Grecanico, Francis and La Minnella Bianca e Nera. His wines are authentic expressions of the eternal terror and as he says, "Wines before being good must be true."
