Cotes du Jura Face B Savagnin  - Les Bottes Rouges 

The Cotes du Jura Face B Savagnin by Les Bottes Rouges is obtained from the grapes of the same name which come from vines planted on clayey soils and which are generally harvested at the end of September. It undergoes very light pressing and is processed in the total absence of sulphur. Fermentation in 440 liter neutral oak barrels, maturation for 18 months. It is a great ouillé white - therefore non-oxidative - with a unique juiciness, a champion. White flowers, tension and length of the sip make the skill of this winemaker evident.

Service

We taste it at 12/14°C. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

Pairings

Excellent as an aperitif, paired with fish starters, main courses of fish, ideal pairing with fois gras tartare.
