Briords Muscadet de Sèvre et Maine by Domaine de la Pepiere is a complex and balanced white wine, mineral and with a beautiful freshness. the name comes from the land “BRIORDS” is located in the hills of Maine. To produce this, Muscadet grapes are used which come from old vines over 60 years old, which are located on granite soil, rich in gravel, sand and clay. The harvest is carried out manually, and the winemaking takes place with spontaneous fermentation which lasts about 1 month. It refines on its own yeasts for eight months, without racking, in compliance with the aging times of the denomination. Served decanted at 12-14°C, it pairs perfectly with raw shellfish, goat's cheeses, etc.
Service
We taste the Muscadet at a temperature of 8/10° in tulip glasses. Wine to be drunk immediately but left a few years to rest in the cellar can give great emotions.
Pairings
The Muscadet goes perfectly with seafood, to try with a belon oyster plateau.
Winery: Domaine de la Pepiere
The Domaine de la Pépière is located at the foot of Brittany, in the village of Maisdon sur Sèvre. His story began in 1984 when Marc, who grew up in these places, decided to create a winegrowing winery, and gave him the name "La Pépière", which originates from the word "pépie" which means "to be thirsty", and walking for the village understands why, the rock seems to be everywhere, the soil is very dry and stony, and the water is always insufficient. Since 1984, the Domaine de la Pépière has grown through the acquisition of new parcels of land, which often bring in dowry old vineyards, so that today it covers an area of about 35 hectares, of which 30 are intended for cultivation of white grapes. Marc is convinced that the quality of the wine depends on the quality of the grapes, for this reason he chose to raise his vineyards of Melon de Bourgogne in a biodynamic regime. The conversion was favored before the arrival in 2007 of Rémi that favors the conversion of the farm into organic farming, and then from that of Gwénaëlle in 2013 that completes the conversion into biodynamic. Harvests are manual, herbicides are banned, and only biodynamic preparations are used to strengthen vine resistance to disease and promote soil microbial life. In the cellar, Marc chose to do as little as possible, with spontaneous fermentations that take place thanks to indigenous yeasts, no clarification or filtration, and the use of sulfur dioxide is limited. Domaine de la Pépiere produces nine labels, all coming from one signet parcel, but all bearing the characteristics of flavor and minerality that distinguish the AOC wines of Muscadet. the
