Nù Litr Bianco is a wine that comes from Bombiono Bianco grapes and is part of the Calcarius Project, born from an idea of Valentian Passalacqua with Danilo Marcucci. The grapes come from young vines located within the Gargano National Park on rocky limestone white soil, and bred with biodynamic methods. Spontaneous fermentation with maceration on the skins for 7 days in open vats with manual hat breakage. Unfiltered and clarified wine with winter racking in steel containers. We are in Apricena - full Gargano National Park - the first extraction center of the south, where limestone is the distinctive element of the territory. Thanks to the close bond with her land, Valentina Passalacqua has adopted an organic agronomic approach from the beginning and, following a long period of observation and study, has gained a profound knowledge of the terroir. After several years of production, Valentina felt the need to isolate some parcels within her vineyards characterized by exclusively limestone soil of the Kimmeridgian type. Thus was born the Calcarius Project: mineral, terroir and uncompromising vines. Native varieties are bred in the company which are the result of a historical-cultural contamination that has its roots in Magna Graecia: Nero di Troia, Bombino, Greco, Falanghina, Negroamaroe Aleatico above all. The cautiously non-interventionist approach in the cellar does the rest.
