Christian Tschida's "Non-Tradition" is a fascinating example of how combining different parcels can create a unique and complex tasting experience. Grüner Veltliner grapes come from two distinctive soil types: one limestone and the other on a steep shale slope, both facing south-east and overlooking the lake. The decision to assemble the two wines led to a surprising result: an aromatic complexity and a layering of taste that offer a rich bouquet, with notes of fruit, spices and minerality. The final result is a symphony of flavors that demonstrates how two elements can come together to create something much greater than the sum of the individual parts, a true case in which 1+1 equals 3. Wasenhaus Chardonnay is an elegant wine, with delicate acidity and beautiful salinity, where you can feel the Burgundy experience of Christoph Wolber and Alexander Götze. The Rossese di Testalonga is a fresh and fragrant wine that is produced with the homonymous grapes which are aged for a year in exhausted wooden barrels. Wine with a brilliant ruby red color. Barbaresco Roncagliette by Olek Bondonio is a pure Nebbiolo in the Michet and Lampia sub-varieties, from 35-year-old vines to 280 meters above sea level. from the Roncagliette cru in the municipality of Barbaresco. Soft destemming and long maceration with the skins for almost a month. Refine in oak barrels of 10 and 15 hectoliters, where it remains for up to 20 months.
