Chavost's "Blanc d’Assemblage" is pleasant and powerful with a good structure, softness and perfect balance. Made from a blend of chardonnay, pinot noir and pinot meunier. The vinification takes place in steel vats, without the addition of sulphites, and the fermentation starts spontaneously with only indigenous yeasts. A bubble with a sure personality, transmitted by the hand of Fabian, Chef de Caves who marries an atypical and non-interventionist vinification.

The "BD'3C Brut Nature champagne by Bourgeois-Diaz is obtained from a cuveè composed of the 3 classic champagne vines; Pinot Meunier, Chardonnay and Pinot Nero, hence the name of the Cuveè 3C champagne. The base wine is aged for about 40% in wood. Second fermentation of at least 24 months on the lees before disgorgement. It has a straw yellow color with a fine and persistent perlage. The nose is citrusy of Amalfi lemon with notes of bread crust. On the palate its its characteristic is its fineness and elegance.

Tarlant's Nature Zero is a Champagne obtained from an almost equal blend of Chardonnay, Pinot Nero and Pinot Meunier. Intense and elegant, with an overwhelming freshness, it ages on the lees for almost 7 years.
