The Arbois Pupillin "Les Ecrins" by Domaine de la Borde is a wine with an oxidative style obtained from the grapes of the same name that come from a very steep vineyard located on gray and blue marls at 400 meters above sea level. The grapes, after harvesting, are destemmed and then fermented in steel. Refines “sans ouillage” (full barrel) for 48 months. Typical nose with elegant oxidized note. Walnut and celery. Mouth powerful but at the same time graceful. Try it with a nice baked chicken or obviously with the Comté.

Service

We recommend tasting it at a temperature of 12/14 ° in tulip glasses. Wine to be drunk immediately but will express its best in a few years. It is recommended to keep it in a horizontal position in a cool, damp and dark cellar.

Today, under the pressure of some prominent producers, the spotlight of the world has returned to being on the Jura. Following in the footsteps of the "Jurassian pioneers", in the last decade a new generation has taken hold with great motivation and dynamism, bringing the hectares of vines to almost 2,000 today. Of this group of young people, surely Domaine de la Borde represents one of the most interesting realities.Its story begins in 2003 when Julien Mareschal, returning from various winemaking experiences around the world, bought 4.5 hectares in Côte de Caillot, just out Pupillin. One idea in mind: defined, clean and straight wines, the exact expression of the fantastic Jurassian terroirs. Mareschal has chosen a natural approach for the management of the vineyards in order to have the utmost respect for the terroir. Phytosanitary treatments are reduced to a minimum and those that are practiced do not involve the use of chemical synthesis products. In the wines of the Domaine de la Borde, therefore, there is not only tradition, but you can very easily see the love for your territory and the passion for things done well.
