It is the best known wine of Le Rocche del Gatto. The name 'Spigau' is the Ligurian dialectal name of the white grape that is used to produce this wine. Vermentino by Rocche del Gatto is a macerated white wine made from Vermentino grapes, which come from the hinterland of Albenga, in the municipalities of Vessalico and Borghetto d’Arroscia. The Pigato by Rocche del Gatto is a white wine obtained from careful vinification with skin maceration of Pigato grapes from vineyards that rest on clayey and rich in iron soils. It is vinified as if it were a red berry wine fermenting for three weeks in contact with the skins in order to make it acquire the maximum organoleptic characteristics of the grape.
