It is produced only in certain vintages from grapes left on the branches until prolonged winter, so that the cold freezes and dehydrates them, allowing a collection of frozen but very sweet berries. Pascaud Villfranche's Sauternes is a wonderful wine obtained from a blend of Semillon, Sauvignon and Muscadelle. Fermentation and aging in oak barriques. It has a beautiful golden yellow color with elegant and intense aromas ranging from dried fruit, to notes of cream and vanilla to finish with a honey aftertaste. In the mouth it is warm, enveloping, mellow, soft but all supported by a good acidity and an interminable finish.

Passito di Pantelleria Bukkuram Sole d'Agosto by De Bartoli is a wine produced with Zibibbo grapes that half are dried on the plant and the other half in the sun. It has a golden yellow color. The nose is an explosion of aromas that go from bergamot, to raisins and spices. The mouth is sweet, balanced and very clean, with a very long floral finish.

The Muz of Partida Creus is a natural vermouth made from red and white grapes enriched with a secret recipe of herbs and spices. Appearance: intense ruby red. Nose: delicious mix of red fruits, citrus peel and baked spices. Palate: clean, easy and juicy. Sweetly fruity, but not sweet, and just a touch of bitter spice on the finish. The Don Fà is a fortified red wine that comes from an ancient recipe of the Barons de Beaumont. For this product only red grapes and black cherry leaves are used. It has a deep ruby red color. On the nose evident hints of black cherry are evident, spicy and balsamic notes. On the palate it is full-bodied and warm, and elegant with a long finish.

Ezio Cerruti's "Sol" is a passito wine that embodies the philosophy that accompanies Ezio in the production of his wines. Produced with white grapes which are left to dry naturally in the vineyard for 2 months and aging in wood for at least 36 months. Bottled without clarification or filtration. Sol is sweet but never cloying supported by the right degree of acidity. The nose gives off spices and yellow fruits. The mouth is tense and mineral and in a very long end. Production of only 5000 bottles.
Grapes: White grapes.
Alcohol content: 14,5%.
Aging: At least 36 months in non-first passage barriques.
