Domaine Camille and Mathieu Apffel is located in St Baldoph, a small town in the Savoie region on the slopes of Mont Granier. Mathieu, originally from Jura, founded the winery in 2014 after traveling the world to learn the art of winemaking. He is supported in his work by his wife Camille, and they are currently part of a movement that is renewing Savoyard winemaking. The vineyards are cultivated naturally and among the rows we find typical Savoy varieties such as Jacquère, Chasselas and Altesse or more commonly known as Roussette de Savoie. After the manual harvest, the respectful approach begun in the vineyard continues with the same savoir-faire in the cellar. Naturally, all oenological additives are prohibited, and the fermentations are entrusted to indigenous yeasts and bacteria, and take place with precise temperature control. The result is wines that can be found in the most elegant restaurants throughout France.
