La Graine Sauvage is located in Cabrerolle, a village located on the heights of the Faugères appellation, in the Upper Languedoc Park, a still preserved place, surrounded by woods and Mediterranean scrub. The company was founded in 2015 by the will of Sybil Baldassarre, an ambitious and tenacious woman who decided to move to France for the love of white grapes and organic viticulture. Today Sybil leads alone 3 hectares of vineyards, creating natural wines with white grape varieties; Grenache, Roussanne, Marsanne and Vermentino, in an Appellation mainly of red wines. The vineyards were planted in 1997 with southern exposure at 400 meters above sea level, on an ancient and strongly cracked schist soil that allows a deep and innervated irradication in the rock, so as to ensure the vineyards a powerful mineral feed and the wine an authentic taste by terroir. In the vineyard, the work favors the maintenance of the vitality of the soil, with the greatest respect for every living being and the precarious balance that still exists, using only substances of mineral or vegetable origin to protect it. During the harvest, the four vines are collected separately in boxes and vinified with only indigenous yeasts without any oenological input or sulphites used. Sybil Baldassarre wines have character!
