Antonio and Fausto Cosmi consider themselves with legitimate pride "farmers dedicated to the world of wine". If the family business has its roots in 1962, and Antonio and Fausto took over the reins almost forty years ago, it was in 1999 that the decisive turning point began, with the abandonment of the delivery of the grapes to the cooperative wineries and the beginning of own winemaking. In 2004 the organic certification (Codex) arrived, in 2011 the approach to biodynamics - "secularly", as the two brothers underline - and the first spontaneous fermentations, with indigenous yeasts. An all-round agricultural company, located in the Roman countryside between the capital and the Castles, a few kilometers from the sea, Casale Certosa owes its name to the friars who, already in the 12th century, established viticulture there. Today 13 of the 18 hectares of the company are dedicated to vines. In the field we opt for green manure rather than chemical fertilizers, exploiting generous soils of volcanic origin. The approach in the cellar is as least interventionist as possible. Pied de cuve and fermentations entrusted to indigenous yeasts; temperature control if necessary; refinement on the fine lees “as long as they have something positive to give”; bâtonnage and decanting; possible clarifications with bentonite; reasonable and limited use of metabisulphites. In the glass, the wines of Casale Certosa reflect the profound beliefs of Antonio and Fausto: "it is useless to chase absolute perfection with even cunning means and instruments, perhaps it is more useful (for our personal satisfaction certainly yes) to obtain good quality without shortcuts , without cunning, with coherence of facts and thoughts".
