Filipa Pato Winery is located near the town of Coimbra, in the Portuguese region of Barraida. Filipa is a predestined fact, his father Luis Pato was himself a winegrower and was one of the first prominent people in Portugal to be able to communicate the excellence of Portuguese wines to the whole world. Filipa started its business in 2001 trying to acquire the best vineyards for the production of white grapes; Bical and Maria gomes, and for the red Baga. From the beginning it has focused on biodynamic viticulture with low yields per hectare, elimination of any chemical substance, attention focused on the use of copper and zinc, and above all to the experimentation of new forms of vinification, from the aging of the barrique to that in terracotta amphora. From 2010 she is accompanied on this trip by her husband William, a well-known sommelier. All the wines of Filipa Pato are territorial wines, together with tradition and innovation, and we feel the classic method: the 3B Blanc de Blanc produced with Baga and Bicale.

Filipa Pato's 3B Blanc de Blancs is a classic method sparkling wine made from a blend of Bical, Cercial, and Maria Gomes, native Portuguese grape varieties. It is bottle-titrated and aged for 10–12 months; after disgorgement, it is topped up with base wine. The nose reveals notes of bread crust, dried fruit, and minerality. On the palate, it is elegant, aromatic, and refreshing, with inviting acidity. A pure and authentic classic method, without artifice.

Alcohol content: 11.5%.

Aging: At least 10 months on the lees in the bottle.

The Dinamica Branco by Filipa Pato is a white wine that comes from a blend of Arinto and Bical. After blending, it ages in 500-600 l oak barrels. A wine that gives the nose aromas of pear, typical of Bical, and iodine and spicy notes. On the sip it is soft, mineral, with a persistent acidity.
