Salvatore Marino's cellar is located in the Buonvini district, whose name already seems to want to give us a clue of what it offers us, in the Sicilian city of Pachino. The project was born in 2017, a work made of study, passion, dedication, but above all of great love for the vineyard, for ancient traditions, for respect for the land and its natural balance. The story, which involves five generations linked to viticulture and wine production, begins in Pachino, a place where the culture of grape cultivation is an ancient, millenary art. Salvatore's philosophy is "Wine is made in the vineyard" according to the ancient saying handed down to him by his grandparents. The vineyards are planted in saplings and the nature of the land predisposes them to the cultivation of vines and the production of wine in a natural way. They are managed according to the lunar calendar, and the work is still carried out by hand with a hoe and scissors, while mature organic manure and the practice of green manure are the only fertilizations used.The vinifications are carried out trying to intervene as little as possible in the transformation of the grapes into wine. The result is a range of wines with an authentic and sincere character, which bring to the fore the varietal notes of the historic vines of the area and the characteristics of the magnificent Pachino terroir.
