"I have always thought that to judge the work of others it was necessary to get involved in the first person, so after having spent so many years proposing natural wines in my restaurant, I thought it was time to produce my own wine". This is how Arnaldo Rossi, the historic patron of the restaurant "Taverna pane e vino" in Cortona, introduces himself. His first vineyard was planted in 2004 on a small plot in Valle di Chio, a valley in Castiglion Fiorentino near Cortona at an altitude of 300 meters. on mixed clay and marl soil. Having always lived in Tuscany, he has chosen Sangiovese, with the intention of launching a challenge to those who in recent years have been captivated by international vines. The processes and treatments are obviously all manual and the soil has never seen either chemical fertilization or any other synthetic chemical substance.
