The Domaine Les Bories Jefferies is located around Caux in the Hérault, in the French province of Languedoc. Joseph Jefferies, born and raised in England, in 2003 after arriving in the Languedoc to restore a house and move with his wife, begins his adventure as a winemaker. He starts as an autodidact, but after meeting Bernard Bellahsen of the Domaine de Fontedicto and Rémi Poujol, he decides to work in the least invasive way possible, in fact he describes his wines as "homemade", to emphasize their aptitude to be consumed in everyday life. Today it cultivates 4.3 hectares of vines on a volcanic soil that gives minerality and elegance to the wines. Its vines have an age ranging from 30 to 70 years and are raised in Grenache Noir and Grenache Blanc, Carignan, Terret and Marsanne. The vinification takes place as simply as possible so that the wines can best express the terroir. Different wines produced; The Pierre de Sisyphe Blanc based on Terret Blanc and Gris, Grenache Blanc and Gris and Marsanne, the Jeanne produced with Marsanne, Grenache Blanc and Terret Blanc, and the Red Sisyphus Stone made with Carignan and Grenache, and all are distinguished by minerality, elegance , frankness and ease of drinking.
