The history of this biodiverse farm (as Silvia, its owner, renamed it), begins in the 70s when Silvia's father, out of pure passion, planted his first half a hectare of vineyard, so as to be able to produce wine. for oneself and for friends. Over the years, however, what was born as a divertissement has become a real job; Silvia's childhood thus took on the color of the must, was cheered up by the noises of the cellar and was filled with perfumes. In 2010, then, it was Silvia who took over the reins of the company, transforming a property of only 4 hectares into one of 12. As you can guess, the watchword in the company is biodiversity; nature is supported as well as the coexistence of different animal and plant species, with mulching, green manure, minimization of pesticide interventions and products that stimulate the self-defense of the plant. The company consists of 16 plots - all in the Torrazza Coste area, in the middle of Oltrepò Pavese - with different soils, exposures and altitudes. Each vineyard, therefore, has its own characteristics and peculiarities and the most suitable soil is reserved for each of them. In the vineyard there are varieties such as cortese, rhine riesling, moscato, pinot grigio, barbera, croatina, pinot noir and rare grapes and the wines (white, red, macerated and pet-nat) are the result of spontaneous fermentation and no filtration. The slightly aromatic Red "Fresh", with strong notes of red fruit, is bottled after a short refinement in steel. Barbera, croatina, pinot noir and rare grapes give, in this case, a wine that can be enjoyed throughout the meal: the right company will make the difference! In the Rosso Pet-Nat it is barbera, croatina and rare grapes that are the masters! It is a red with persistent aromas and a balanced taste, naturally refermented in the bottle with the favor of spring temperatures. Call the meats and conviviality. Spontaneous fermentation, maceration for 60 days, no temperature control and aging in steel: this is how "Skin Busters" was born. Orange, with intense notes of candied fruit and a strong taste, is truly superb with raw fish. Naturally refermented in the bottle, Bianco Pet-Nat is a combination of courteous, Rhenish riesling and Muscat. Fragrant and with an inviting acidity, it is fun - both as an aperitif and throughout the meal - like few others. The inviting golden yellow color, the refined aromas and a slight sapidity finally make the White "Fresh" irresistible! Accord - perfect - of Cortese and Rhine Riesling, it is a White aged briefly in steel, ideal for an aperitif. As in the case of cherries ... one bottle leads to another!
