Producer Podere Cipolla

Podere Cipolla is located in Coviolo, in the province of Reggio Emilia, south of the ancient Via Emilia, an area rich in food and wine history. Born in 2003 by the will of Denny Bini who buys a small plot of land of half a hectare. Denny begins to cultivate native vines such as Lambrusco Grasparossa, Lambrusco Salamino and Sorbara, Malbo, Gentile, and Malvasia, which he uses to make single-vine wines. Immediately he decides to produce his wines according to the traditional method of refermentation in the bottle, a method that in his area has been lost at the expense of the Charmat or Martinotti method. Denny, in the cellar, makes wine using only indigenous yeasts, and does not make clarifications or filtrations in order to preserve the characteristics of the vine to the maximum. This allows to obtain more structured wines with a well-delineated tannin that help the wine to stand the time without the need for sulfur. In addition to the refermented classics, we find the Maestrale 315 still red wine based on Malbo Gentile and, with the same vine, Denny produces the Tramontana 360 an interesting sweet wine. The wines of Denny Bini are a hymn to Lambrusco and its rural tradition.
