Recaredo is not just a winery; it is an idea. Founded in 1924 by Josep Mata Capellades, it was shaped around an ancient and radical gesture — manual disgorgement — which still defines its identity today. Over time, it has become the benchmark for traditional method sparkling wine in Spain, a name that transcends appellation to become a cultural symbol. Stepping into Recaredo means entering two worlds that seamlessly merge: the Mediterranean light of the vineyards and the silent depth of cellars reminiscent of the great houses of Champagne. It is a rare balance between nature and technique, patience and precision, where every choice is guided by uncompromising coherence. We are in the Penedès, in Catalonia, on ancient marine hills known as Serral, facing the rocky massif of Montserrat. Limestone marl and gypsum soils reflect the light and provide depth, creating ideal conditions for character-driven sparkling wines — a vocation already recognized at the beginning of the 20th century. After nearly fifty years within the DO Cava appellation, Recaredo made a defining choice: leaving the denomination to become one of the founding members of Corpinnat, an independent collective created to safeguard origin, quality, and craftsmanship. Only indigenous grapes, certified organic and biodynamic farming, manual harvest, in-house vinification, a minimum of 18 months on the lees, and vineyards either estate-owned or managed long term. A clear manifesto: belonging to the land above all. Today, the estate farms 80 hectares under certified Demeter biodynamics and works exclusively with spontaneous fermentations. The production protocol is rigorous: tirage and aging under natural cork, extended lees aging, manual riddling, disgorgement à la volée without freezing the neck, and no dosage. Always Brut Nature — a pure, vertical expression of terroir. Alongside the historic range stands L’Infinit, a project that broadens the horizon with a Blanc de Blancs and a Rosé, introducing indigenous varieties such as Malvasia de Sitges and Sumoll, partly sourced from local biodynamic growers. Here too, a minimum of 18 months on the lees. The result is gastronomic, finely sculpted, and profound wines — marked by saline tension and slow evolution, always with the aim of expressing this remarkable territory. Recaredo embodies a Mediterranean interpretation of the traditional method: luminous, precise, territorial, and uncompromising. A benchmark. A legacy.
