The Vino Cotto of Podere San Biagio is a sweet wine obtained by boiling the must in copper cauldrons. It is caramelized by boiling, raw must is added to start the fermentation and once fermented it is added to the barrel of the previous year. Cooked wine is a traditional wine dating back to the Picene civilization.

The Sangue di Giuda dell’Oltrepò Pavese "Fiore del Vento" by Andrea Picchioni is a sweet and fresh wine with low alcohol content, obtained from a blend of croatina, barbera and rare grapes. Pecorino Machaon by Ausonia is a fresh and lively white wine that is made from grapes that come from the oldest vineyards of the company. The Trebbiano d'Abruzzo Apollo of Ausonia is obtained from the grapes of the same name from the oldest vineyards of the company. Its aging takes place for 6 months in steel. "Valentini's Trebbiano d'Abruzzo is a complex and opulent wine, which has become famous for its incredible longevity.
