TRAVEL IN PIEDMONT

The most cultivated vines are those with red berries and the real Piedmontese prince is Nebbiolo which gives rise to praiseworthy wines such as Barolo and Barbaresco. Other typical vines are Barbera, Bonarda, Dolcetto, Freisa, Grignolino, Pelaverga, Ruchè 'and Vespolina. Among the whites we mention the Roero Arneis, the Cortese, the Erbaluce, the Favorita, the Timorasso, the Gavi and the rare Nascetta, but the most widespread is the Moscato Bianco. Do not forget the Malvasie Rosse, Casorzo and Schierano able to give excellent sweet wines. The main wine growing areas are the Langhe, the Monferrato, the Asti, and the Alto Piemonte with the DOCG Gattinara and Ghemme. We point out the area called Alta langa where wonderful Classic Methods based on Pinot Noir are produced.

Principiano's Nebbiolo is a juicy red wine with a great drink obtained from the homonymous grapes. It has a ruby ​​red color. The nose offers vinous and fruity notes, in which even more woody touches are inserted. In the mouth it is medium bodied, fresh, elegant with a balanced finish.

Montemarino di Cascina degli Ulivi is a white wine made from grapes of old vines worked in biodynamic and macerated for 3 days on the skins.  Ages on fine lees for 12 months in the same containers and more than a year in concrete containers. No clarification and filtration before bottling. Montemarino has a golden yellow color. The nose expresses floral and fruity aromas, toasted and mineral notes. In the mouth it is enveloping, with a slight sapid vein, persistent closing.

Grapes: White grapes.

Alcohol content: 13,5%.

Aging: 12 month in wooden barrel.

Ezio Cerruti's "Sol" is a passito wine that embodies the philosophy that accompanies Ezio in the production of his wines. Produced with white grapes which are left to dry naturally in the vineyard for 2 months and aging in wood for at least 36 months. Bottled without clarification or filtration. Sol is sweet but never cloying supported by the right degree of acidity. The nose gives off spices and yellow fruits. The mouth is tense and mineral and in a very long end. Production of only 5000 bottles.

Aging:  At least 36 months in non-first passage barriques.

Semplicemente Vino Bianco by Cascina degli Ulivi is an agile and fruity wine produced with white grapes from vineyards that rest on red and clayey soils. The alcoholic fermentation is spontaneous in acacia wood barrels and the aging on the fine lees is 3 months in the same containers. Naturally clarified, it undergoes a light filtration before bottling. No addition of sulfur dioxide during all stages of production.

Dolcetto by Cavallotto is a red wine obtained from the homonymous grapes from the Scott vineyard. It is traditionally vinified with natural yeasts and aged in concrete tanks for 6/8 months. Ruby red color, the nose has characteristic aromas of red fruit with a marked cherry and a slight background of floral bouquet. In the mouth the general structure and softness are good.
