The "Ghiaretolo" of Santa Caterina is a red wine with good structure, fruity and enveloping obtained from Merlot grapes. After fermentation in steel tanks, the wine matures for about a year in old 350-liter tonneaux, before being bottled. On the nose aromas of red fruit, small berries and woody notes. Rosmarinus' Rossese di Dolceacqua Alpicella is a fine and delicate wine that is produced with the grapes of the same name. The grapes come from a small parcel cultivated in biodynamic which is located near Alpicella. After manual harvesting, in the cellar the fermentation is spontaneous with only indigenous yeasts and without temperature control, with maceration on the skins for about 15 days. After racking, it ages in steel for 12 months. Elegant. A wine that tastes of aromatic herbs, orange peel and brackish memories.
