Spontaneous fermentation with only indigenous yeasts with 3-4 days of maceration in contact with the skins. The refinement lasts 9 months in 550 liter barrels. The Berette 2.0 by La Ricolla is a simple, genuine and sincere macerated white wine made from Vermentino grapes. Berette, from the Ligurian saying, “Cuanto ti gou leave inse e berette”, or “How long do you leave it on the skins”. Spontaneous fermentation and maceration on the skins for 14 days in stainless steel vats. Aging in the same containers with frequent battonage for 10 months. Fresh and with good salt, it moves smoothly in the mouth, leaving the palate clean, satisfied and inebriated by citrus and mineral aromas. Harmoge by Walter De Battè is an energetic and mineral white wine obtained from a mixture of local white grapes. Spontaneous fermentation and maceration on the skins, from 4 to 8 days; while aging takes place in oak barrels for 15 months. A wine that is expressed on the nose with hints of candied fruit, notes of aromatic herbs, hints of resin and flint and sapid tones. On the palate the perfume is rich, soft, with great envelopment and minerality.

The Pigato by Rocche del Gatto is a white wine obtained from careful vinification with skin maceration of Pigato grapes from vineyards that rest on clayey and rich in iron soils. It is vinified as if it were a red berry wine fermenting for three weeks in contact with the skins in order to make it acquire the maximum organoleptic characteristics of the grape. After fermentation, a long stay on the noble scum follows.Pigato has a golden yellow color due to maceration. The nose is intense and fresh, with fruity and floral notes. The sip is dry, soft and full-bodied, with excellent flavor, persistent finish with a pleasant bitter aftertaste.
