Quartz Blanc by Les Cailloux Du Paradis is a wine made from Sauvignon Blanc grapes grown on a vineyard planted on soils rich in sand and quartz. The grapes ferment in used barriques, where they then age for 18 months. Upon opening, the nose is timid with light notes of green apple. A little oxygen is all it takes for it to explode with notes of brown sugar, cinnamon, celery, cucumber, and a hint of nutmeg. The palate is vibrant, with acidity guiding the sip, accompanied by notes of white peach and sage. A long finish.
