Savagnin from Les Chais du Vieux Bourg is a white wine made from the grapes of the same name that come from 45-year-old vines that grow on blue marl subsoil under a layer of ice. Aging of 2-3 years in small barrels on fine lees, without decanting. Average quantity produced: 1,500 bottles per year. A delicious and structured wine that offers aromas of white berry fruit, citrus and mineral notes.

Alcohol content: 13,5%.

Aging: 12 months in barrique.

A code name, B.B.1, for a wine obtained from a blend of Chardonnay and Savagnin, and signed by Ludwig Bindernagel, an architect who became a winemaker in 2003. The nose is powerful, with hints of pineapple and hints of lemon. At the sip it hits with a burst of freshness and fruit that explodes in the mouth.

The Arbois Pupillin "Les Ecrins" by Domaine de la Borde is a wine with an oxidative style obtained from the grapes of the same name that come from a very steep vineyard located on gray and blue marls at 400 meters above sea level. The grapes, after harvesting, are destemmed and then fermented in steel. Refines “sans ouillage” (full barrel) for 48 months. Typical nose with elegant oxidized note. Walnut and celery. Mouth powerful but at the same time graceful. Try it with a nice baked chicken or obviously with the Comté.
