Sardinia

Sardinia is one of the regions that is raising the average quality of its wines faster. One of its features is the presence of almost exclusively native vines. We find red grape varieties like Cannonau, known elsewhere with the names Garnacha and Grenache, Carignano, Cagnulari, Girò, Monica, Nieddera, white berries where the Malvasia of Sardinia, the Nasco, The Nuragus, Semidano, Vermentino and Vernaccia of Oristano. Numerous DOCs present and one DOCG, Vermentino di Gallura. In the northern part we find the Vermentino di Gallura, the Moscato di Sorso and Sennori and the DOC Alghero where the rare Torbato of Alghero is produced. In the central area are the Vernaccia di Oristano, an oxidized white wine that resembles Sherry, the Malvasia di Bosa, a small white wine produced in very small quantities, the Campidano di Terralba, obtained from Bovale grapes, the singular DOC Arborea They use vines such as Trebbiano and Sangiovese, and DOC Mandrolisai, whose wines are a blend of Bovale and Cannonau. The southern area is the reign of Carignano del Sulcis, and around the province of Cagliari are produced many types such as Monica, Nasco, Moscato, Nuragus the Girò. There are also 5 inter-regional DOCs that are: Vermentino di Sardegna, Moscato di Sardegna, Monica of Sardinia, Cannonau of Sardinia, Sardinia Semidano.

Fillet is a kaleidoscopic and wonderful wine that refines in old wooden barrels with the development of flor which makes it unique. With an intense and bright yellow color, in which the first honeyed scents mix with harsh, smoky and deeper balsamic notes, leaving a hint of the aftermath: a complex sip, slightly marsala, warm on the palate, with vibrant acidity.

Alcohol content: 16,5%.

Aging: Oxidative refinement in old oak barrels with the development of flor.
