Producer Chevassu Fassenet

Chevassu Fassenet is a family-run business located in the heart of the Jura, in eastern France. The company was founded in 2008 by Marie Pierre who in 1980 decided that the world of wine was the one in which she wanted to operate. He studied oenology in Beaune and Dijone, then worked between Châteauneuf-du-Pape, Champagne and also New Zealand. Marie Pierre cultivates 5 hectares of vineyards, most of which are within the AOC Chateau Chalon, with the classic Jura vines: chardonnay and savagnin for the whites, pinot noir and trousseau for the reds. The vineyards, some of which reach 60 years of age, are meticulously cared for, with the total absence of fertilizers and insecticides, and the only protection is given by sulfur and copper. In the cellar, spontaneous fermentations and refinements in oak barriques are preferred. The domaine does not mix different vines but vinifies them in purity and, in some cases, produces cuvées from single crus.
