Producer Domaine des Pérégrins

The route of the Domaine des Pérégrins is the reflection of a typical history of Chablis. Farmers for several generations in Poilly-sur-Serein, in the south-east of the Chablisien area and 10 km from the center of Chablis, like many of their colleagues the Moreaus had abandoned viticulture in the difficult years, preferring cereals and livestock. In 1982, however, when Laurent began working alongside his father Maurice, the idea of replanting vines on these beautiful Kimmeridgian marls took shape again and quickly materialized. In 1995 Laurent also built the cellar, to be able to make his own wine. In 2000 he stopped using herbicides. Between 2011 and 2016 Éléonore Moreau, Laurent's daughter, joined the company, later joined by her younger brother Baptiste. The family sensitivity for environmental protection is realized with a transition from de facto organic practices to a true conversion towards organic, started in 2019 and completed in 2022. The pesticides authorized in organic are however used sparingly; the soils are grassed and weeded; fertilizers are only organic. Winemaking is carried out in such a way as to enhance a raw material so well preserved in the vineyard. The Chardonnay bunches are hand-harvested for the entire "Chroniques" range – the one we chose. The gentle pressing takes place under CO2 protection, which allows us to avoid the use of sulphites. The alcoholic fermentation occurs spontaneously thanks to only indigenous yeasts and the winemaking takes place in stainless steel, with temperature control. The malolactic is also spontaneous. The use of bentonite (a type of clay) allows for gentle clarification, which avoids artificial tartaric precipitation. At the end of a long refinement without other oenological additives, the wines are gently filtered on Kieselguhr soil. The use of sulphites is limited to the maximum. This winemaking approach allows us to preserve the talent of the Poilly terroir and deliver authentic, typical, very frank and precise chablis.
