The WAW project was born from the collaboration between Luca Gargano and the Japanese photographers Keiko and Maika and aims to give life to a line of "primitive" wines in amphora: original and original wines, primordial wines, the oldest and closest to nature. The idea, carried out by various producers from different countries, is to share the same vinification method that does not require any type of intervention: manual grape harvesting, vinification in whole bunches in amphora, maceration until the end of fermentation (from 3 to to 6-7 months) and direct bottling without pressing. The wine must be the result of the assembly of at least two grape varieties: white for 78% and red for the remaining 22% and the amphorae used are all of Spanish origin, handcrafted by Orozco di Villarrobledo. The resulting wines do not want to boast of being "great wines", but rather of being good wines, which can be drunk by everyone and every day, thanks to their ability to accompany any type of dish both in terms of origin and ingredients. Wines that make people exclaim "WAW!" to anyone who drinks them. The label is unique and shared, differing only in the name of the producer, and in the center there is a letter that resembles a "y", an ancient Phoenician letter that was pronounced just like "WAW".
