André Beaufort's company was founded in 1969 when André himself became aware of his allergy to synthetic products usually used in viticulture. Hence his decision to start a production based on the "regimes" of organic farming. In the 6.5 hectares of vineyards divided between the Grand Cru of Polisy in the Aube and Abonnay in Mame (where the winery is also located). The vines, located on clayey soil, are pampered with homeopathy and aromatherapy. The soils are worked with surface hoeing, vegetable composting plants mixed with organic products. The spontaneous fermentation takes place by parcels in steel vats and in wooden barrels with the development of malolactic fermentation avoiding too high doses of sulfur. The bottles are left to rest for months or years until disgorgement, still done by hand (“a la volée”).
