Quantum Winery is a small and young winery located in Maissau, an Austrian municipality located in the district of Hollabrunn, in Lower Austria. The winery is led by Florian Schuhmann, of a quiet and reserved nature, who has in mind to produce only natural and genuine wines that represent not only the different varietals and terroirs but above all the powerful imprint of nature in viticulture Its vineyards are cultivated in a biodynamic regime, and are found on soils of predominantly granitic origin located on the hilly terrain of Weinviertel, one of the best areas of Lower Austria for the cultivation of the vine. In the vineyards we find mainly local varieties such as the Gemischter satz, the Gruner veltliner, the Roter veltliner, the Gemischter satz rot, the Portugieser, the Zweigelt, but also international varieties such as Pinot Noir, Pinot Blanc and Cabernet Sauvignon. Florian in the cellar looking to intervene as little as possible, with spontaneous fermentation with indigenous yeasts only, maceration on the skins, no filtration before bottling and very low addition of sulphites so as not to alter the purity and taste-olfactory profile of the wines. The Quantum wines range includes Chaos Rot red wines, made from Gemischter satz rot grapes, and Der Herr Baumann from Portugieser grapes. Then we find the white wines; Chaos Weiss based Gemischter satz, the Dekonstruktion produced with Gruner Veltliner, the Enigma Weiss by Roter veltliner, and the Chop Suey Weiss that comes from a blend of Pinot Noir and Pinot Bianco. Delicious wines, absolutely enjoyable, which have the only flaw of going out every year in a handful of bottles.
