Ivo Ferreira is originally from Porto, Portugal. After the meeting with Jean Baptiste Daguerre who introduced him to the great kitchen he moved to Paris where he began working in the restaurant. Here he met Frank Lucas who offered him a sommelier's place and this experience gave rise to his passion for wine. He began his training first in Jura, where he participated in a first harvest, and then moved to La Tour Blanche in Sauternes. After this experience, he worked for 5 years at Château Le Puy, in Bordeaux, where Pascal and his father Jean Pierre became his friends, teachers and examples to follow. It permanently moved to Languedoc, an exceptional region for the variety of vines and land of the highest quality, where it finds its first 5 hectares of vineyard, divided into the territories of Montepeyroux and neighboring villages, with an average age of 60 years. The vineyards benefit from a microclimate particularly favorable to organic farming: one of the main characteristics of the climate is that in spring and early summer strong winds come from the north-west, which avert diseases to the vine, especially downy. So the treatments are reduced to a few quantities of copper and sulfur. Among the red berried grapes we find the Cinsault, the Carignan, the Syrah and the Grenache, while among the white we have the Terret Gris, the Grenache Blanc, the and Muscat Petit grain. In the cellar all the procedures, which Ivo follows with Julie Brosslin, his partner, are carried out with the utmost care to maintain the authenticity of the final product, therefore spontaneous fermentations and macerations on the short skins for a time that varies between seven and ten days depending on the vine. All Ivo wines are sincere, mineral, and warm, telling of a dry and windswept region.
