The winery of Xavier Marchias is located in Faye d'anjou, a small village of just over a thousand souls located in the department of Maine and Loire. Xavier, after seven years of Parisian life as an IT engineer, left the capital in 2010 to fulfill his dream of becoming a vigneron. Xavier, began his training at Olivier Cousin, a winemaker in Martigné-Briand, and seduced by his personality, decides to make wine using traditional methods and respecting the environment. His wines are not dense and full of extracts, but light, fine and graceful, able to capture the essence of the territory. Xavier cultivates 5 hectares of old vines grown above all in Cabernet Franc and Chenin Blanc, which are found on clayey soils. In the vineyard for the works does not use the tractor but a horse, the harvest is manual, with several steps to obtain ripe and healthy bunches. In the cellar the grapes are first pressed in a hydraulic press, then pressed with their feet, without excess, to obtain a clear must, without impurities. Four wines able to leave their mark: the Cabernet Franc: clean, clean and drinkable, the Chenin is a "blade", and its oxidized, the Mysterieux, always obtained by Chenin, evokes combinations to lose our head. The wines of Xavier Marchias are fresh, lively, thirst-quenching, true wines of thirst.
