The company is in Vulcano one of the seven Aeolian Islands. In the vine does not use herbicides or chemical fertilizers, the harvest is manual and the drying is done on traditional "cannizzi" for a period ranging from 8 to 12 days. Production yield is very low around 25-28 quintals per hectare, and even water is not available for rescue. In the cellar the minimum of necessary interventions is made. There are no wineries in Vulcano, so Paola collects the bunches in wooden boxes every time they harvest, and carries them on the ship, which in turn takes them to Salina, where vinification takes place.
