Cascina degli Ulivi is a splendid company located on the hills of Novi Ligure in the province of Alessandria. Born in 1977 from an idea of ​​the volcanic Stefano Belotti, a great friend of Nicolas Joly, who can be considered the father of natural wines in Italy. Stefano was then only 18 years old and starting from one hectare of vineyard, with hard work and a lot of effort, he managed to create a company that today has 22 hectares, 10 of which are cultivated with vineyards and the others are cultivated with wheat and fodder. But the project also includes the breeding of cattle and small farmyard animals and a farm, where it is possible to have lunch and dinner tasting the local specialties and the wines of the cellar. Stefano Belotti immediately embraced the method of biodynamic agriculture and in his vineyards there are no peeling or topping, the treatments are limited to copper and zinc and composite sowings of legumes are sown to make the land fertile in a natural way. In the cellar spontaneous fermentations, indigenous yeasts and refinements in steel tanks or old chestnut barrels.
