Wai Bianco is an ancestral method, the result of a blend of Pinot Noir and Riesling. It has a straw yellow color. The nose reveals aromas of flowers and white-fleshed fruit, followed by notes of white pepper and bread. The sip is juicy and fresh, satisfying, in short, the wine that must never be missing in the summer to open and drink without problems.

Castello di Stefanago's Spumante Metodo Classico Brut Blanc de Blancs "Ancestrale" is a sparkling wine obtained from a blend of local white grapes. The disgorgement is done manually, after 24 months of permanence on the lees, and the bottles are filled with the same wine without adding anything.

Stella del Filare's Ancestrale is a refreshing wine, which demonstrates excellent texture and unexpected elegance on the palate, for a bubble with very high drinking potential. 100% Pinot Noir from a single vineyard, the bottles are disgorged after approximately 9 months, filled with the same wine and aged in the bottle with cork for 6 months before being put on the market. It runs out quickly, better to have a second bottle on hand.

Ravarini's Franciacorta DOCG is a 100% Chardonnay, the product of a single vintage, aged in steel, with a stay of at least 30 months on the lees. It is a vinous and honest Franciacorta, direct and without frills, it still remains of a very fine elegance. Depending on the vintage and the permanence on the lees, it can vary in intensity and heat, oxidation and typical hints of yeast and bread.

The Metodo Classico Ma Non Troppo is the latest arrive to Tenuta Belvedere. It is a wine that comes from pure Pinot Noir grapes. The grapes come from a 35 year old vineyard with a yield of 70 quintals. Manual harvest at the end of August and a soft pressing in the cellar. Only 30%, i.e. the must, will be fermented spontaneously with only indigenous yeasts in steel tanks. Draft in May and stop on the lees for about 27  months. No addition after disgorging. Pas Dosè type.
