As de les Annèes Folles Ancestrale is an ancestral sparkling wine made from Pineau D'Aunis and Chenin Blanc grapes. Fermented in the bottle, disgorged "la volèe" after 24 months on its lees, zero dosage. Bouquet of nuts (bitter almond, hazelnuts), citric hints of yellow citrus fruits, flint. On the palate it is tense and fine, crunchy and intense, with a pleasant freshness and salinity.

Gaz de Schistes by Domaine Durrman is an aromatic pet nat with citrus scents and a vibrant acidity. The name derives from the schist slopes from which the grapes come. The Pinot Blanc is macerated for three weeks before being blended with Pinot Gris and Riesling, which continue fermentation together before finishing fermentation in the bottle. Domaine des Roches Neuves' Bulles de Roche is an expressive and mineral sparkling wine that was born and grown in Saumur, in the Loire, obtained from a blend of Chenin Blanc, 95% present, and Cabernet Franc, 5%. The base wine ages in wood used in which previously passes the Insolite It remains on the lees for 18 months. At sight it shows an intense yellow color. The scent recalls the citrus notes of grapefruit and lemon, on a pleasantly floral background of wildflowers and aromatic herbs. In the mouth it is savory and fresh, elegant and mineral. The Cremant d'Alsace by Domaine Durrman is a complex and crunchy wine made from a blend of Pinot Blanc, Riesling and Pinot Gris. The grapes are hand-picked as usual and in the cellar they are fermented with indigenous yeasts in stainless steel tanks. Refine on its lees for one year in the tank. The second fermentation is done with the addition of must. Bottled without filtration, without clarification and without added sulphites. Not dosed.A splendid wine thanks to the freshness of Riesling and the tension given by Pinot Bianco. This is Yann's largest production wine. 8000 bottles!

Festejar is a delicious pet nat obtained through the method of fermentation in the bottle with grapes of two particular types of Gamay; the Gamay d'Auvergne and the Gamay de Beaujolais. It has a brilliant ruby red color with a nose that smells of blueberry, red raspberry, mint and a hint of spice. On the palate it is fresh, with a slight residual sugar that immediately feasts.
