As de les Annèes Folles Ancestrale is an ancestral sparkling wine made from Pineau D'Aunis and Chenin Blanc grapes. Fermented in the bottle, disgorged "la volèe" after 24 months on its lees, zero dosage. Bouquet of nuts (bitter almond, hazelnuts), citric hints of yellow citrus fruits, flint. On the palate it is tense and fine, crunchy and intense, with a pleasant freshness and salinity.

Pretty Nuts by Koppish is an Austrian sparkling wine obtained from a blend of Blaufränkisch and Syrah with the method of refermentation in the bottle. Vinification with direct pressing of whole bunches, drawing off before the start of fermentation in fiberglass. At the right point of fermentation, the wine is bottled (by the whole family, by hand). Disgorged by hand, no addition of sulphites.
