The Valpolicella DOC Superiore of Il Monte Caro is the balanced wine obtained only from corvina, corvinone and rondinella grapes in slight over-ripening hand-picked in crates, pressed and refined in steel only. The freshness well balanced by the softness and the alcohol content make it pleasant to taste and also suitable for creative combinations.

Antolini's Valpolicella Ripasso Classico Superiore is a red wine scented with red fruits, and which is fresh, savory on the palate, with velvety and enveloping tannins. Obtained from Corvina, Corvinone and Rondinella grapes, Ripasso is a bridge between the young Valpolicella and the "adults" Amarone and Recioto because it is produced by refermenting the vintage wine for 5/7 days on the pomace of the dried Amarone and Recioto grapes . Excellent to taste with first courses with succulent seasonings, red meats and not too mature cheeses.
