Red wine obtained from a blend of Corvina Veronese, Rondinella and Molinara. The vinification is carried out in steel barrels for about 10-12 days at a controlled temperature and re-fermented on the still warm and sugar-rich Amarone pomace immediately after the Amarone is racked. Aging in oak barrels for about 2-3 years and at least 6 months in the bottle. The color is ruby red tending to garnet with aging. On the nose the aromas are intense, with notes of ripe fruit and berries. Persistent on the palate with hints of vanilla, ripe cherry, tobacco and spices.

Aging: In oak barrels for about 3/4 years and at least 6 months in the bottle.

Antolini's Valpolicella Ripasso Classico Superiore is a red wine scented with red fruits, and which is fresh, savory on the palate, with velvety and enveloping tannins. Obtained from Corvina, Corvinone and Rondinella grapes, Ripasso is a bridge between the young Valpolicella and the "adults" Amarone and Recioto because it is produced by refermenting the vintage wine for 5/7 days on the pomace of the dried Amarone and Recioto grapes . Excellent to taste with first courses with succulent seasonings, red meats and not too mature cheeses.
