Hip Hip J ... S by Domaine L'Octavin is a white wine made from Savagnin grapes that come from the Domaine Villet in Arbois. Macerated in whole bunches for two months, followed by a year of aging in large oak barrels. Maceration allows Alice to play with the more aromatic side of Savagnin, giving exotic fruits and a touch of spice. A nice acidity adds further complexity to the wine. Pr3 Acid Insolente is a wine obtained from pure white grapes. Spontaneous fermentation without temperature control in cement containers, racking and resting on the lees until February. A wine that is a boost of sharp acidity.

Aging: A few months in cement tanks.
