"L'Illicite" by Thomas Rouanet is a macerated white wine composed of Terret blanc, Terret gris, Carignan blanc, Carignan gris, and a few bunches of Muscat of Alexandria and Chasselas. Fermented in whole clusters for 6 weeks with frequent punching down, while the refinement takes place in wooden barrels for six months. The minerality is ample both on the nose and on the palate, and the sip is full, fresh and deep, elegant and of excellent persistence. A wine that manages to conquer everyone.
