Sottobanco is the new white wine by Andrea Occhpinti. A wine that strikes for its rich and sharp taste with an evident minerality. Vinification with whole cluster pressing and spontaneous fermentation with indigenous yeasts in small concrete barrels, without the use of chemical additives and oenological adjuvants, with the exception of a modest quantity of sulphites in the bottling phase. Refine 6 months in steel / cement barrels and at least 2 months in the bottle.

Semplicemente Vino Bianco by Cascina degli Ulivi is an agile and fruity wine produced with white grapes from vineyards that rest on red and clayey soils. The alcoholic fermentation is spontaneous in acacia wood barrels and the aging on the fine lees is 3 months in the same containers. Naturally clarified, it undergoes a light filtration before bottling. No addition of sulfur dioxide during all stages of production.

Note di Grillo by Alessandro Viola is a white wine produced with 100% Grillo grapes that come from vineyards located on medium-textured, clayey soils at 220 m above sea level. Harvest in the first ten days of September and in the cellar spontaneous fermentation with only indigenous yeasts. Subsequent aging for 6 months in steel tanks.
